Summer officially arrived today. Just in time as we’re having a heat wave.
Today’s lunch was perfect for this kind of weather.

Steamed Potatoes and Steamed Asparagus
Champagne Sauce
I brushed the salmon with extra virgin olive oil and sprinkled it generously with salt and pepper. Cooked it the way we like it: medium rare. The Champagne sauce — first time I’ve made it — was an excellent accompaniment for the fish. Along with salt and pepper, a light coating of butter on the Yukon Gold potatoes and a squirt of lemon juice on the asparagus.
We both agreed it was a delicious lunch. A great way to welcome my favorite season.
